Classes

Healthy Connections Classes

The Co-op offers cooking and health and well-being classes September through June. Each season includes several free classes, so there's something for every budget. Cooking classes emphasize whole and organic ingredients, and when possible, fresh local produce.

All classes (unless noted) are held in the Co-op Connection Building on the south side of the parking lot on Forest Street. Please park off site if possible.

To Register for Classes

Registration requires payment in full. Stop by the co-op service desk in person, or call (360) 734-8158 (credit card payment only). For any other information, contact Kevin at 734-8158 or email kevinm@communityfood.coop.

Pre-payment is required to secure your space. Some classes have limited enrollment, while others may be cancelled due to low enrollment, so it is recommended that you register as soon as possible.

To Receive Healthy Connections E-Mail Updates

If you would like to receive weekly e-mail updates on Healthy Connections Classes, please send an e-mail to kevinm@communityfood.coop Type in the subject "HC updates", and in the text of the message, just type in your name and "cooking", "wellness" or "both", depending on which category of class you'd like information on. The update will include descriptions of upcoming classes in the current week and the week after, changes in the schedule, alerts about classes that are filling up or in danger of being cancelled, as well as some news about classes on the horizon. The first e-mails will be sent out in September, and they will continue until June.

Classic Winter Soups

You can't get through the winter without soup! Karina will provide expert general tips for making soup, as well as demonstrating the creation of these four great soups: Minestrone Milanese, Butternut Bisque, Turkey Pinto Bean Chili, and Hearty Chicken Noodle.

Ring in the Year of the Red Dog in style! Chinese New Year is January 29, but we'll be celebrating early. On tonight's menu: Szechwan Peppercorn Duck, Mandarin Hot Sour Soup, and Fish with Garlic Black Bean. For a little extra festivity, the wine option is $7 for six ounces.

Risotto

Risotto, the classic rice dish of Northern Italy, is a rare combination of grandeur and down-to-earth goodness. A hot, creamy bowl of risotto is a true comfort food and is a great way to get through a cold winter night. The specialty of risotto is that it is the vehicle for all sorts of exceptional ingredients--limited only by your imagination. Sheena will make a vegetable risotto, (Risotto Alla Paesana), and a mushroom risotto, (Risotto Ai Funghi). A salad with oranges, (Insalata Con Le Arance), and bruschetta (grilled garlic bread) will also be prepared to complement the Risotto.

Winter Greens

The bounty of the winter garden is reflected in the year-round abundance of leafy greens in the Co-op. Eager to partake of this abundance but not sure how to cook greens? Dr. Jean McFadden Layton, naturopathic physician and former professional chef, has some ideas. Maple Mustard Green Sauté, Vegan Red Chard Rollups, Cauliflower and Mustard Greens with Peanut, and Pasta with Kale Sauce are all warming recipes for this cold season that enhance the verdant energy of these green powerhouses.

Cook Your Chicken

Roast Chicken Stuffed with Wild Rice And Cranberries, Boneless Steamed Mushroom Chicken and Chicken Noodle Soup. For those so inclined, we'll have wine to complement the poultry at six ounces for $7.

Dynamic Energy Meets Dynamic Diet

Winter is here, bringing with it the usual players--rain, wind, more rain, and hopefully some snow. Rather than wait around for the opportunistic virus to tear into you, why not boost your immunity by creating meals that work in harmony with nature. Tonight we focus on dishes featuring the often misunderstood chili pepper. Chili provides great depth of flavor as well as provides a very useful warming quality to our foods. Meals will take us south of the border with stuffed ancho chilis, and even further south with a fantastically easy-to-make chicken dish from Ethiopia.

A Chocolate Tasting

A post-Valentine's Day treat! Taste an array of fine chocolates from premier Santa Cruz chocolatier Richard Donnelly, and the Pacific Café. A special feature of the class will be the making and tasting of a fine dark French chocolate ganache. A six ounce portion of wine to go with the chocolate is available for $7.

Curries and Coconuts

Enjoy the aromatic blends that make up the quintessential tastes of Thai food. Learn to blend your own red and yellow curry pastes using fresh spices such as lemongrass, galangal, coriander, and chilies. Add coconut milk and create marinades and soups suited to your unique taste. We will make a red curry marinade for a chicken satay, and a vegetarian yellow curry with pineapple served with jasmine rice. A six-ounce sample of wine selected to complement the food is available for $6.

African Cooking

The chef and owner of Vancouver's award-winning Nyala African Cuisine demonstrates the preparation of Couscous Marrakech, a spicy one pot meal from Morocco made with lamb, vegetables, couscous (semolina wheat), and raisins. He will also make Yeshimbra Asa (Ethiopian-style garbanzo flour cakes). Be sure to bring an appetite!

Hold on to Your Heart--Cooking for Heart Health
with Tom Malterre and Ali Segersten of Whole Life Nutrition

Scientific studies have proven over and over again that diet and lifestyle changes can reverse cardiovascular damage, and that eating certain foods can help you hold on to your heart. Certified Nutritionist Tom Malterre will discuss the history of diet and cardiovascular disease ending with the latest recommendations. Personal Chef Ali Segersten will demonstrate the preparation of some fabulous heart protective foods. Menu: Vegetarian Chipotle Chili, Arugula Salad with Lime Vinaigrette, Sticky Brown Rice, and Heart Healthy Chocolate Brownies.

The Medicinal Power of Food

This question and many others will be answered by the Nutritionist and Personal Chef team of Whole Life Nutrition as they explore the science and recipes behind the amazing medicinal properties of food. We'll discuss how specific foods affect thyroid function, cholesterol, blood pressure, and blood sugar. Come experience the tastiest medicine around. Pilates for the Pelvic Floor-

ilates is known for establishing a powerful core. Learn the anatomy of the core and apply the knowledge to a series of essential Pilates component movements emphasizing the pelvic floor connection to breathing and movement. All participants should be able to get on and off the floor easily. Please bring a pillow, hand towel and bath towel. Elizabeth Hampton PT is a physical therapist, Rehabilitation Certified in Pilates, a childbirth educator and published author on the topic of pelvic floor rehabilitation. Mind/Body/Spirit

Qigong of Tai Chi

The primary emphasis of this class will be the qigong (breath) aspect of Yang-style tai chi. Practice four important tai chi movements, Flying Eagle Qigong, and self-massage. Robert Fong has practiced tai chi and related arts for over 35 years. He teaches tai chi in Bellingham, Hawaii, and on Orcas Island.

Rolfing is a method of structural assessment and restructuring that uses the inherent mobility of the fascial system of the body to enhance balance and movement. Health and Healing Through Homeopathy

The Absolute Kick Butt Cancer Book

The Absolute Kick Butt Cancer Book is the product of that process. In it, Sharon writes of the tools many of those people used to stake a claim on their own lives. "When survivors look closely at why they survived and others didn't, amazing things are discovered. So amazing, they have to be shared."

Natural Approaches to Thyroid Health

Nearly 12 million Americans have diagnosed thyroid disorders, and an estimated 15Ð20 million more have undiagnosed thyroid problems at any given timeÑand the numbers are going up. This class will present practical ways to promote individual thyroid health before and during thyroid illness, emphasizing the use of food, herbs, seaweeds, and lifestyle changes. Simple home tests for thyroid problems will be described. We'll discuss simple hypothyroidism, Hashimoto's thyroiditis, hyperthyroidism, Graves' disease, and thyroid nodules (including case histories), and will consider participants' concerns and cases as time permits. Ryan Drum has lectured on thyroid health at herbal and naturopathic schools and conferences for 10 years.
